Naturally Sweet Date & Oat Squares (Wheat-Free)

If you're craving something sweet but still want to nourish your body, these naturally sweet Date & Oat Squares might just become your new favourite. They’re made with wholefood ingredients, contain no added sugar, and are completely wheat-free making them a lovely little treat that feels indulgent.

Perfect as an afternoon pick-me-up.

What You’ll Need (Makes 9 Squares)

For the filling:

  • 200g pitted dates (about 1 cup, packed)

  • 180ml water (¾ cup)

  • ½ tsp vanilla extract

  • Small pinch of sea salt

  • Optional: 1 tsp lemon juice – helps balance the sweetness beautifully

For the base and topping:

  • 120g rolled oats (1½ cups)

  • 90g ground almonds (¾ cup)

  • ½ tsp cinnamon

  • Pinch of sea salt

  • 3 tbsp coconut oil or olive oil

  • 2 tbsp maple syrup or date syrup (or 1 ripe mashed banana if you're avoiding added sweeteners)

  • Optional: 1 tbsp chia seeds or flaxseed for an extra fibre boost

How to Make Them

  1. Preheat your oven to 180°C (350°F) and line a small baking tin (around 20cm x 20cm) with parchment paper.

  2. Prepare the filling: Gently simmer the dates with the water in a small saucepan for about 10–12 minutes until soft and jammy. Stir in the vanilla, salt, and lemon juice if using. Let it cool slightly.

  3. Mix the crumble: In a mixing bowl, combine oats, ground almonds, cinnamon, salt, and any optional seeds. Add the oil and syrup (or banana) and mix until it forms a crumbly dough.

  4. Assemble: Press two-thirds of the oat mixture firmly into the base of your tin. Spread the date mixture over the base, then crumble the remaining mixture on top and press down gently.

  5. Bake for 25–30 minutes until golden and firm. Let them cool completely before slicing into squares.

  • Storage: Keeps well in the fridge for up to 5 days

  • Freezer-friendly: Store in a container and freeze for up to 3 months

  • Nut-free version: Swap the ground almonds for sunflower seed meal – works beautifully
